Caramel

Cook Time: ~30 min  • Caramel Temp: 242°  • Pan: Lg. Sauce Pan

Ingredients

  • 1 Quart of whipping cream
    • leave out of refrigerator at least 1/2 hour before using.
  • 4 Cups Karo
  • 4 Cups White Sugar

Directions

  • Mix sugar and karo, well, cook on low until bubbles.
  • Add I teasposon of salt, and 1/2 pound of butter, let it come to a hard boil. (Stir so it doesn’t burn).
  • Add cream 1 to 2 Tablespoons at a time.
  • Turn burner on high for 10 to 15 minutes, stirring constantly.
  • Then turn to medium and cook until the thermometer reaches 242 degrees (take off burner immediately) Again keep stirring so it won’t burn).
  • After it reaches 242 degrees add 1 teaspoon of vanilla. Pour into buttered pan.
  • When cool cut into pieces and wrap in waxed paper.
